Cookies “To Tchaikovsky”, or How to cheer up on a cloudy autumn evening?

And no, this is not a disregard for the great composer, but a play on words to cheer up. After all, homemade cakes with such a name cannot be tasteless! This is a universal recipe, you can add your favorite filler to your liking or the one that is lying around in the kitchen cabinet.

You will need:

  • 2 eggs;
  • 160 g margarine or butter;
  • 1st. sugar;
  • 2 tbsp. flour (+/- see the dough);
  • ½ tsp salts;
  • 1 tsp baking powder;
  • a pinch of vanilla;
  • 2 tbsp. poppy;
  • 2 tbsp coconut flakes.

On a note! In a recipe, ingredients were measured in a 200 ml glass.

It is better to remove the eggs from the refrigerator at least thirty minutes in advance so that there is no strong temperature difference when mixing liquid ingredients.

Do not be afraid to use a spread or margarine in cookies, the taste of sweet pastries will not suffer, but do not be stingy – buy a quality one.

Which is better to choose – spread or margarine? So, according to GOSTs, the use of hydrogenated fats in a spread is limited, unlike margarine, where there is no such limitation. Also, in spreads, the content of trans isomers (a type of unsaturated fat) should not exceed 8%. Medical research has shown that trans fats have a negative effect on the cardiovascular system, and their consumption is best kept as low as possible. There are more requirements for making spreads, let’s hope that this makes them better and more useful.

So, making the dough … Melt the spread / margarine or butter in a water bath and let cool to room temperature.

Eggs must also be driven in here, sugar, vanillin and salt must be added. Mix everything with a whisk.

Pour baking powder into flour and sift into a bowl with liquid ingredients. Do not pour all the flour at once; knead the dough in two stages. When the dough ceases to be liquid, then continue kneading with a spatula or spoon. Better to use silicone or plastic, the dough sticks to them less. Add flour if necessary, the dough should be steep.

On a note! Instead of poppy seeds and coconut flakes, you can use any filler: sesame seeds, flax or sunflower seeds, crushed nuts, raisins, or even finely chopped chocolate (if suddenly it has not been destroyed earlier).

Grease a baking sheet with refined vegetable oil and sprinkle with flour.

Cookies can be deposited on a baking sheet in several ways:

  • pastry bag;
  • using a tight bag with a cut off corner;
  • spoon moistened with water.
