What is the name for a biscuit with apples? Which Charlotte once baked dessert and immortalized her name?

There are several versions of the origin of the names, for every taste. According to one of them, the wife of King George III, the English queen Charlotte of Mecklenburg-Strelitz (1744-1818), gave her name to a sweet dish. According to legend, it was she who advised the court chef to prepare a light dessert of apples, eggs, milk and sugar.

Another version is close to the first, only nameless: in translation from Old English, the word “charlyt” means exactly the same sponge cake with fruit made from beaten eggs and sweet milk with flour.

Russian charlotte is simple in execution, it is not difficult to prepare it, a minimum of products, a maximum of taste.

You can make a charlotte from pieces of yesterday’s bread soaked in an egg mixture or milk, put it on the bottom of a greased form, spread slices of peeled apple (pears, plums, apricots – any fruit) on it. Cover the pie with the same bread soaked pieces and bake.

This is a classic recipe for a do-it-yourself pie: tasty, fast, budget and stale bread does not need to be thrown away.

Usually charlottes are baked in autumn, when the apple harvest pleases, and the prices for these fruits begin to creep down.

In our family, bread charlottes are not welcome. We don’t buy white bread and loaves, but there is enough rye for several dinners without a trace. Since there is nothing to dispose of, we prepare the main dough with a minimum of food. And without milk.

In the culinary recipe for charlotte, the main thing is not apples, but eggs – the result depends on how you beat them and mix them with flour.

Beat four large eggs until peaks with a glass of sugar. Beat thoroughly, preferably with a mixer, since manual beating will take time and energy. Whisk with good thoughts, turn on classical music. My favorite option is “Waltz of the Flowers” P. I. Tchaikovsky… The theme of airiness will be set.

Sift one glass of flour, saturate with oxygen, “push”. You no longer need flour on a form with a diameter of 20 cm, the biscuit will rise, there will be enough volume. Excessive flour will kill the biscuit.

Add 0.5 teaspoon of vanilla sugar and a teaspoon of baking soda to the sifted flour. You can add a teaspoon of cognac to the dough for taste. To achieve the airiness of the dough, add 100-150 grams of melted butter. Calorie content and tenderness will be added.

And slowly add the beaten eggs to the flour, mix carefully so as not to damage the foam.

For the experiment, you can beat the whites and yolks with sugar separately, it will turn out more airy. Although this recipe is the most important cooking secret: mix everything together at once and bake without opening the oven, it will still turn out delicious.

Cooking the filling: peel 5-6 large apples and cut into thin slices. Soft and very sweet apples are not suitable for charlotte; they will turn into mashed potatoes during baking. The ideal option is Semerenko winter apples, glossy green, firm, sweet and sour.

There should be a lot of filling. If there are no apples, take pears or mix both fruits. There is no need to pre-cook the apples, we clean and cut them just before baking.

Grease the bottom of the mold abundantly with butter, you can immediately pour out a part of the dough, put the apples and pour the rest of the dough on top. Or you can sprinkle sweet breadcrumbs or biscuits, previously ground in a coffee grinder, on butter. Then pour the dough into the bottom of the pie, not half, as in the first case, but only a third.

Apples can be poured into the dough randomly, or you can show off, put them round or according to your own creative scheme – creativity is welcome.

Preheat the oven before baking the biscuit, setting the temperature to 180 degrees. We put the pie in a heated oven for 20-25 minutes. Before this time, it is dangerous to open the oven lid: the biscuit may fall off.

We check the readiness in 20-25 minutes with a toothpick, piercing the cake in the middle. If the wooden stick is dry, the charlotte is ready.

You can decorate charlotte in different ways.

Sprinkle with powdered sugar or nut crumbs, coconut flakes.

It is good to shake the icing sugar on pre-prepared stencils, for example, cut out several silhouettes of apples from paper and arrange them in a circle. Or put a round plastic napkin with a slotted pattern on the cooled cake. Then carefully pour the powdered sugar through a strainer and remove the stencils and a napkin. Handsomely!
