How to cook zucchini? Fast, tasty and varied!

Fried zucchini salad

Simpler than simple, lighter than light, while the dish is hearty, it will perfectly complement or replace a full dinner.

One medium zucchini three on a coarse grater with the skin. Do not forget to wash vegetables! Peel one medium carrot and three on the same grater.

Fry the carrots in vegetable oil first, stirring constantly. After about five minutes add the grated zucchini to the pan and salt to taste. We either fry the vegetables until the vegetables are fully cooked, or leave them a little undercooked, as the Italians would say, al dente (per tooth). Then our salad will be crispy, fresh.

Pass one clove of garlic through a press, finely chop your favorite fresh herbs.

As soon as the vegetable mixture cools down, mix the fried zucchini and carrots with garlic, herbs, season with … What? And here the hint will come from self-permissions, desires and wallet.

A few tablespoons of yogurt or natural yogurt will add a dietary twist to the salad. Mayonnaise will fall apart imposingly in a salad, amplifying with calories. Heavy artillery.

Lazy squash caviar

When time is running inexorably, when there is absolutely no desire to cook zucchini caviar according to the classic recipe, constantly stirring the vegetable porridge, the “lazy” recipe rushes to the rescue.

According to this recipe, squash caviar is not stored for a long time, it is not harvested for the winter. This is an instant delicacy for the whole family.

Two large zucchini, one or two large carrots, two tomatoes (first remove the skin by sprinkling with boiling water), cut one sweet bell pepper and two onions into cubes. In this culinary recipe, the beauty of cutting is not required, the entire vegetable bouquet will go to the blender.

Stir, salt, add black pepper to taste, three tablespoons of vegetable oil.

We put the chopped vegetables in a baking sleeve, make several punctures in it and put them in an oven preheated to 180 degrees for an hour.

After the vegetables are baked and the sleeve has cooled, drain the juice (how fragrant it is!) And beat with a blender until smooth. It turns out 700-800 grams of delicious squash caviar.

Sleeve juice can be added to boiled rice, used in soups and borscht.

If the zucchini is frozen, caviar can be boiled using this recipe in winter.

Zucchini for the winter “Like mushrooms”

According to this recipe, I harvest zucchini every year. Delicious, simple and fast.

This recipe has several raisins.

  • First: the preparation is done quickly, and the hostess is free for three hours.
  • Second: sterilization does not last long.
  • Third: it turns out a delicious appetizer for meat, boiled potatoes, fried fish, or as an independent dish.

1.5-2 kg of elastic zucchini wash and cut into cubes. In this recipe, the beauty of the slices matters. Thin-skinned zucchini need not be peeled.

Finely chop 3-4 large cloves of garlic, rinse two small bunches of fresh herbs in several waters and then finely chop. One small pod of hot pepper in crumbled rings.

Add one heaped tablespoon of salt, one teaspoon of ground pepper, three tablespoons of sugar and 150 ml of vegetable oil and 9% vinegar.

We mix everything, trying not to crush the tender squash cubes. We leave on the table, covered with a clean towel or lid, for three hours.

Before placing in glass jars, we boil them in clean water along with lids. Gently pack the appetizer into still warm jars and lower the hangers into a saucepan with water starting to boil for 5-7 minutes (for 0.5-0.7 liters of jars), covering them with sterilized lids.

It remains to twist the jars for the winter, after cooling down, glue the labels with the name of the snack, the date of manufacture and put it in the pantry, basement or other storage place for homemade preparations.
