In summer, we have the opportunity to get an environmentally friendly product, if not from our own hacienda, then from someone else’s. After eating fresh berries, vegetables and fruits, closing a couple of dozen jars of jams and pickles, you can consider the job done – the supply of vitamins has been replenished, health has been taken care of.
However, scientists say the nutrients in frozen fruits and vegetables are well preserved. And in terms of their benefits, frozen summer gifts differ little from fresh ones. What’s more, the health benefits of frozen vegetables and fruits in winter are much greater than those of greenhouse ones.
In order for the freezing to be of high quality, select fully ripe fruits without damage, not overripe, for harvesting for the winter. Sort vegetables and fruits, wash and dry, peel, remove the skin and seeds.
As for vegetables and herbs, it is best to freeze them already cut in bags or in small containers. These homemade products are good for salads, soups or stews in winter.
How to freeze berries?
Storing berries frozen is a little more difficult, because each of them needs an individual approach.
Strawberries, raspberries and blackberries (dry berries) are frozen by placing them on plates and leaving them in the freezer. Put frozen berries tightly in cardboard, plastic bowls or plastic bags and close them so as not to freeze moisture. Store in the freezer.
If the berries are soft, they can be placed in boxes with polyethylene at the bottom or plastic containers and frozen.
How to freeze berries in sugar?
To preserve the appearance, before freezing it is necessary to remove the stalks from ripe berries. Put on a cloth or paper for 15 minutes to dry, then put in a basin and sprinkle with sugar – 0.3 kg of sand per 1 kg of berries, and leave in the refrigerator until the juice appears.
Then put the berries, the syrup with the remaining sugar in a container so that the distance between the berries is filled with syrup, and leave open in the freezer for a day. Then close it and place it back in the freezer.
How to freeze berries in syrup?
First, the berries, syrup (400 g of sugar per liter of water) and containers must be chilled in the refrigerator for two to three hours. Then put the berries in containers, pour cold syrup and, without closing the lid, stand in the freezer for 24 hours. Then pack and leave there.
How to freeze currants, blueberries, blueberries, cranberries, lingonberries, etc.
Washed berries of currants, sea buckthorn, viburnum, cranberries, blueberries, gooseberries can be frozen by sprinkling on plates. Then, already frozen, pour into plastic bags for storage, tightly tied. Can be placed in cardboard, plastic boxes. Or you can freeze it in syrup (1 kg of sugar per 1 liter of water).
How to freeze fruit?
Cut the apples, remove the core, peel and freeze in the same way. Small apples, whole. Plums and cherries – with seeds. It is important to choose the “right” fruit, which is firm and intact enough.
It is best to defrost them later at room temperature.
Shelf life of frozen vitamin products:
- Currants, raspberries, gooseberries, strawberries – up to a year.
- Green onions, beans and peas – six months.
- Apples and cauliflower – 5-6 months
It is not recommended to freeze thawed food again, in order to avoid loss of vitamins.

- 500 g frozen berries, 45 g gelatin, 350 g sugar, 0.5 lemon, 3 tbsp. tablespoons of coconut.
Defrost frozen berries (any), sort out and chop in mashed potatoes. Add gelatin and leave for 15 minutes, then add lemon juice to taste. Put a saucepan with mashed potatoes on low heat, add sugar and cook, stirring occasionally, until the gelatin and sugar are completely dissolved.
Sprinkle the bottom of the baking dish with coconut and pour the mixture, cool slightly and refrigerate until it cools completely. Then cut into cubes, rhombuses or triangles and sprinkle with coconut or powdered sugar. And then it all depends on your taste and imagination.
