The history of the dark burger
This miracle of fast food appeared in 2012. It was invented by the Japanese Kana Yenga, an employee of the Burger King fast food chain. The innovative dish was named Kuro Burger, which means “black burger”, and immediately gained incredible popularity.
The original burger had a secret ingredient: natural cuttlefish ink. It was they who gave the dough a dark shade. In 2013, they even began to make completely black burgers, in which not only a bun, but a cutlet, cheese and sauce were painted in dark colors with ink.
In Italy, they also initially used exclusively cuttlefish ink, which gave the buns a richly fishy taste. Served seafood burgers like that.
However, “Gothic” burgers are cooked differently in different countries, replacing the secret ingredient with another. The culinary industry does not stand still, so sometimes the dough is darkened with the help of special dyes. They don’t have a distinct flavor and are great for making black burgers.

Cooking a dark burger
To prepare a sandwich and fill it, you will need:
- 3 tablets of activated carbon;
- rye flour – 500-600 g;
- half a glass of water;
- half a glass of milk;
- eggs – 3 pcs.;
- two chicken breasts;
- sour cream – 100-200 g;
- hard cheese and cheddar – 70 g each;
- live yeast – 2 tsp;
- sugar and salt;
- butter – 25 g;
- green salad;
- tomatoes – 2 pcs;
- Red onion;
Baking dark burger buns is actually a fairly simple job. They are made from rye flour, which is dark in itself, so the dough only needs to be slightly colored.
Activated carbon tablets are crushed to a homogeneous mass – by hand or in a coffee grinder. The mass is sieved and mixed with 400 g of flour. Then salt, 1.5 tablespoons of sugar and dry yeast are added. Then 0.5 cups of milk, one egg and water. Everything must be mixed thoroughly to get a homogeneous mass.
The dough is infused for 30-40 minutes, and lumps of equal shape are formed from it – for one bun each. The balls are placed on a baking sheet greased with butter (or with baking paper laid down). From above, each lump is smeared with sour cream and sprinkled with sesame seeds.
The buns are baked for about 30 minutes.
Burger patties are formed from any meat. In this recipe, it’s chicken breast. The steak is made from finely chopped fillets mixed with two eggs, grated hard cheese, 100 g flour and a spoonful of sour cream. Round cutlets are fried in a preheated pan over medium heat for no longer than 10 minutes.
Additionally, the burger is packed: onion sliced into rings, lettuce, round tomato slices.
Sauce made from herbs (dill, parsley, basil – optional), garlic, sour cream and ketchup.
The finished buns are taken out of the oven, each cut in half. The lower part is greased with sauce, the components of the burger are placed on top – in random order. You can add additional ingredients and remove existing ones, everyone will find something to their liking.
A delicious and beautiful sandwich will decorate any table! It is not difficult to prepare it, but you should not abuse products made from black dough, since the activated carbon known to everyone is dangerous to drink uncontrollably. The sorbent removes liquid from the stomach, as well as potassium and magnesium. There will be no harm from two or three tablets, but you do not need to part with the drug.
