Kvass is a drink that was prepared in ancient times. Egypt is considered his homeland. In the 3rd millennium BC, the ancient Egyptians prepared an analogue of this drink, which, in fact, was something in between kvass and homemade beer.
There are mentions of kvass in the works of Hippocrates, Herodotus, Pliny the Elder.
There is a legend about the origin of this drink.
… One careless master got water into a pot filled with grain. The grains were saturated with it and sour. But the master was greedy. He was sorry to throw away the spoiled grain. He dried it, and then ground it into flour. However, no bread came out of it. But the result is malt. Instead of bread, the master began to prepare a nourishing liquid that tasted good. He diluted the flour unsuitable for bread with hot water and allowed the liquid to ferment. And so, according to legend, bread kvass appeared.
The inhabitants of Kievan Rus also knew about this drink. The letters of the year 989 have survived to this day, in which kvass is mentioned. They talk about the Kiev prince Vladimir, who converted the people to the Christian faith and ordered to distribute food, honey and kvass to obedient subjects.
However, modern bread kvass was very different from that which our distant ancestors drank. It was intoxicating swill, the strength of which reached 15 degrees. People who are fond of this alcoholic drink were popularly called “fermentors”. In all likelihood, the expression “ferment” (excessively drinking alcohol, drinking) from there and went.
When asked by the housewives, is it possible to make kvass at home so that it tastes like the purchased product, the answer is in the affirmative. There are several simple recipes for making a delicious and aromatic drink on your own.
You can cook kvass with yeast… For this drink recipe, you will need to stock up on a set of ingredients consisting of:
- boiled water – 10 l;
- granulated sugar – 2.5 cups;
- citric acid – 1 tsp;
- dry yeast – 10 g.
Prepare the drink as follows. A few tablespoons of granulated sugar are burned in a cast-iron pan until it darkens and a brown foam appears.
Burnt sugar is poured with boiled warm water. Mix thoroughly. The remaining sugar with citric acid is added to the liquid. After their complete dissolution, dry yeast is added. Mix thoroughly and pour the resulting liquid into plastic bottles, close them with lids. It is not worth pouring liquid to the top, you need to leave some free space.
The containers with the future kvass are exposed to the sun for the whole day. During this time, you will need to open the bottle several times to release excess air from it.
At the end of the day, containers with ready-made homemade kvass are placed in the refrigerator. After cooling, the drink will be ready to drink.
You can cook kvass and yeast-free… This delicious drink is made from rye bread. To prepare it, you will need to take a set of products consisting of:
- boiled water – 3 l;
- stale rye bread (you can take Borodinsky) – 300 g;
- granulated sugar – 6-8 tablespoons;
- raisins – 15 pcs.;
Cut the bread into pieces (3-4 cm). Dry it in the oven. Croutons are poured into a three-liter jar. Pour them to the top with hot boiled water (temperature + 70 ⁰ C). Sugar and raisins are added to the contents of the glass container. To make the fermentation process faster, you can add 1 tbsp. l. dry yeast, but this is optional.
The contents of the container are thoroughly mixed. The jar is covered with gauze folded in several layers. Leave for 1-2 days at room temperature. After that, the liquid is filtered, a little burnt sugar is added to it to give the kvass a caramel aroma and a beautiful rich color.
