For cooking pickled plums take fresh fruits. They should be dense and not overripe. Wash them and fill a heated three-liter jar with plums. Then you need to pour the contents of the container with boiled marinade.
To prepare the latter, take a set of products consisting of:
- water – 5 glasses;
- granulated sugar – 500 g;
- table vinegar – 0.5 cups;
- carnations – 12 pcs.;
- cinnamon powder – 2 g.
Fill an enamel pot with water, add sugar and spices. Place on the stove. Let the contents of the pot simmer for 7 minutes.
Remove the marinade from the stove, pour the vinegar into it and immediately pour the hot flavored liquid over the plums in the jar.
Cover the jar with a lid, pasteurize it for half an hour at a temperature of +90 ⁰С, then roll up.
To pickle apples, take small ripe fruits. Wash them, cut them into slices. The core needs to be removed.
Fold the fruit slices into an enamel saucepan and fill it with salted cold water (proportion: 10 g of salt to 1 L of water), leave for half an hour.
Blanch the apple slices for 3 minutes, refrigerate. Fill 5 liter jars with them, after placing 0.5 g of cinnamon and 3 clove buds on the bottom of each. Pour the boiled marinade over the apples.
To obtain a marinade for 5 cans of 1 liter, take the ingredients:
- water – 1.4 l;
- sugar – 500 g;
- vinegar – 200 g.
Sterilize jars with apple slices in the marinade for a quarter of an hour, then roll up.
You can also pickle pears… The fruits are prepared and blanched similarly to apples. Put them in liter jars, after adding cinnamon (0.5 g), cloves (4 buds), allspice (4 peas) to each container.
Pour the contents of the cans with a hot marinade made from the following products:
- water – 1.5 l;
- granulated sugar – 600 g;
- vinegar – 160 g.
The filled cans are covered with lids, sterilized for 20 minutes and rolled up.
An original spicy delicacy – pickled melon… For pickling, take a ripe fruit with a dense pulp.
They wash the melon, cut it in half, and remove the seeds from it. The pulp is cut into small pieces. They are blanched in boiling water, then cooled by immersion in cold water.
Place some powdered cinnamon and a few cloves in the bottom of a 1-liter jar. Fill a glass container with chopped melon pulp. You should not fill the jar to the top, leave some free space.
Then pour the boiled marinade over the melon pieces. To prepare the marinade, the amount of which is enough for 5 cans of pickled melons, with a capacity of 1 liter each, take the ingredients:
- water – 1.5 l;
- granulated sugar – 550 g;
- table vinegar – 200 g.
A jar filled with marinated melon slices must be sterilized for 20 minutes by covering it with a lid. After that, all that remains is to roll up the jar.
