Eggplant is native to India, where it has grown wild since ancient times. This vegetable was once cultivated in China and the countries of Central Asia and has been used in cooking for over one and a half thousand years! Eggplant dishes have gained popularity in many national cuisines from Israel to Ethiopia.

- eggplant – 0.5 kg;
- onion – 1 pc .;
- garlic – 2 cloves;
- minced meat (from any meat) – 300 gr;
- salt – 1 tsp;
- ground black pepper – ⅓ tsp;
- Provencal herbs – 1 tsp;
- bell pepper – 1 pc.;
- tomatoes – 3 pcs.;
- pasta – 250 g;
- vegetable oil (for frying);
- tomato juice (optional) – 0.5 l;
- hot pepper (optional) – ⅓ pcs.
Eggplant must be peeled and cut into small cubes.
On a note! To rid the eggplants of bitterness, before cooking, the cut and peeled pieces must be salted, thrown in a colander, allowed to stand, rinse off excess salt with running water and dry them.
Put the eggplants in a frying pan with heated olive oil and fry until tender for about 15 minutes. It is better to use extra virgin olive oil,
Cut the onion head into small cubes and sauté in a frying pan in vegetable oil. Add chopped garlic, minced meat to the onion and fry until tender. This will take approximately 15 minutes.
In the meantime, cut the end of the tomato crosswise and lower it in boiling water for 10 seconds. Peel the skin, cut into small cubes and squeeze out the juice.
Dice the bell peppers as well. If you want tangible pungency in a hot dish, then finely chop a third of the hot pepper.
Next, add salt, all the spices, chopped tomatoes and peppers to the minced meat, add the pasta and fill it with tomato juice or water.
If you don’t have tomato juice at hand, and you don’t feel like running to the store, don’t be discouraged. With water, this pasta dish is also delicious!
Mix everything well and cover with a lid. Simmer for 20 minutes until the pasta is done.
When the pasta is ready, add the eggplant and stir.
Everything! A delicious quick dinner is ready! Add finely chopped herbs for flavor and garnish.
