The homeland of beans is the South American continent. At first, this plant was grown as an ornamental flower, but only in the 17th century it was used in cooking. Since then, beans have been cultivated as a vegetable crop.

Today it is massively grown on the territory of Ukraine, Uzbekistan, the Baltic countries. Bean dishes are an integral part of the Bulgarian and Caucasian cuisine.

Beans are a valuable food product. They contain up to 31% protein. Dishes made from them can be an alternative to meat dishes.

Beans are characterized by a unique chemical composition. They are rich:

  • inulin;
  • flavonoids;
  • organic acids (malic, citric);
  • vitamins (pantothenic acid, pyridoxine, nicotinic and ascorbic acids).

Contained in beans and substances that regulate metabolism and protein synthesis. We are talking about betaine, tyrosine, leucine, lysine, choline.

Arginine is also present in it, which is characterized by an insulin-like effect on metabolic processes in the human body. Due to this circumstance, the product is indicated for people suffering from diabetes mellitus. It is characterized by a hypoglycemic effect.

A decoction with vegetable raw materials of beans and blueberries is an effective remedy for traditional medicine, indicated for patients suffering from moderate diabetes mellitus. Official medicine also recognizes this remedy as effective.

However, before resorting to it, a person suffering from diabetes should consult your doctor and get the go-ahead for such therapy. Doctors strongly do not recommend using such herbal remedies uncontrollably. In addition to its hypoglycemic effect, beans also have other medicinal properties. It is useful for the prevention of heart and vascular diseases due to the high content of magnesium and folic acid.

The product is also useful for those who are struggling with excess weight, since it has the property of suppressing appetite. Beans contain a lot of fiber, which improves the functioning of the digestive system. Eating these foods can improve bowel motility.

  • Despite the health benefits, beans should be used with caution by people suffering from gastrointestinal diseases. Doctors recommend refraining from it for patients diagnosed with gout. A healthy person should not abuse such food. Overeating threatens with bloating and pain.

You will need to boil the beans (400 g) in salted water. While hot, they are ground until a pasty mass is obtained. To do this, you can use a sieve, meat grinder or blender. Mashed potatoes (from 2-3 tubers), 1 raw chicken egg are added to the pasta. The mass is thoroughly mixed, salted, pepper to taste. Add some browned onions.

Cutlets are made from the resulting bean mince. Each is rolled in breadcrumbs and fried in a pan until golden brown. Serve vegetarian bean cutlets along with tomato sauce.
